Of my BBQ spice rub recipes this easy-to-make, all-purpose blend is certainly a favourite ! A tasty blend of ingredients it works with all types of meat and also works as a general seasoning for other dishes: meaty soups, stews, casseroles etc. (See the bottom of the page for other BBQ recipes)
Note: When making your blend, and for the best flavours, I advise using whole spices if you can. Sometimes this is not practicable as you may not have them, so in these cases, use pre-ground powders and reduce the amounts by half. So for 2 tablespoons of cumin seeds you would use 1 tablespoon of pre-ground cumin. Reduce any others you don't have whole by half as well.
What You'll Need: (makes about 10-11 tablespoons)
2 tbsp cumin seeds
2 tbsp dried thyme
1 tbsp black peppercorns
1 tbsp cayenne pepper
1 tbsp dried oregano
4 tsp brown sugar
2 tsp mustard powder
2 tsp celery seeds
2 tsp garlic powder
2-3 tsp sea salt
2 tsp ajwain seeds (optional)
tbsp = tablespoon
tsp = teaspoon
Store your BBQ rub in a sealed jar out of direct sunlight. Use within 3 months.
If you have time, then toasting the whole ingredients prior to grinding is worth considering as the heat really brings out their flavours.

How to Use:
Evenly cover your meat with the blend and massage it in. Put in plastic wrap or place in a sandwich bag and place in your refrigerator for a couple of hours or, if you have the time, overnight.
About an hour before cooking time, take out of the refrigerator and let it return to room temperature. Cook according to your recipe.
