Recipe For Indian Spice - Add the Superb
Flavours of India to Your Home Cooking

Making your own homemade Indian spice is highly recommended, especially if you want to recreate the taste and quality you'll find at a top quality Indian restaurant. Below is a fairly complex blend which I think goes a long way to replicating those authentic flavours. (See the bottom of the page for other recipes)

Note: If you can, for the best flavours, try and use a few whole ingredients for this seasoning. But if you only have pre-ground powders to hand it's perfectly fine to use these. If you do; reduce the quantities by half. So for 4 tablespoons of whole coriander you use 2 tablespoons of pre-ground coriander. Reduce any others you don't have whole by half as well.

Homemade Indian Spice Mix Recipe

What You'll Need: (makes approx 10-11 tablespoons)

4 tbsp coriander seeds
2 tbsp cumin seeds
1 tbsp mustard seeds
1 tbsp cubebs (or black peppercorns)
1 tbsp fenugreek seeds
1 tbsp turmeric 
4 tsp garlic powder
4 tsp paprika 
2-3 tsp chili powder
1 tsp asafoetida 
1 tsp ginger powder
15-20 curry leaves
12-15 green cardamom pods

tbsp = tablespoon
tsp = teaspoon

Directions:

  • Crack the cardamom pods and remove the seeds. Discard the husks
  • Grind the cardamom with the coriander, cumin, fenugreek, mustard, cubebs and curry leaves
  • Sieve into a bowl
  • Add the pre-ground powders and combine thoroughly

Store your Indian food seasoning in a cool place in an airtight jar and out of direct sunlight. Use within 3 months.

Note: Before grinding, you could lightly toast the coriander, cubebs, mustard, cumin and fenugreek. This really draws out their fabulous flavours and aromas. Read more on toasting and grinding(Link opens in new window)
