Homemade Biryani Masala Spice

Apologies for lack of newsletters recently. Had a few computer issues. They'll be back to weekly from now on.

For the best Indian rice dishes then I recommend you make this classic Indian mix! Easy-to-make, the fab flavours and aromas that it'll add to your rice dishes makes this recipe one of my absolute favourites.

Makes about 8 tbsp

2 tbsp cumin seeds
1 tbsp green cardamom pods
1 tbsp peppercorns
4 tsp coriander seeds
2 tsp garlic powder
2 tsp chili powder
1 tsp whole cloves
3 inch piece of cinnamon
6 dried bay leaves
2-3 mace blades (optional)
2 tsp caraway seeds (optional)
2 tsp salt

tbsp = tablespoon
tsp = teaspoon

Directions:

  • Crumble the bay leaves and break up the cinnamon stick

  • Finely grind the cinnamon and bay pieces along with the salt, cardamom pods, peppercorns, cloves, cumin, coriander seeds and if using the mace and caraway seeds

  • Once ground, add to a bowl

  • Finally, Finally, add the garlic and chili powders to the bowl. Combine thoroughly

How to Toast and Grind

Dry toasting and grinding spices is the key to getting the most flavour out of your ingredients and into your home cooking...

Step 1: Add your whole spices to a dry pan over a low to medium heat and whilst stirring or shaking the pan, lightly toast them for a few minutes. When you can really smell the aromas and they start to darken, they're ready.

Step 2: Let them cool and then grind.

Step 3: For a finer blend, put them through a sieve before combining with any ground ingredients and herbs.
