Pumpkin Mix

As Halloween is now upon us, what could be better than a homemade pumpkin pie spice recipe? This traditional, flavour-packed blend is super easy-to-make and will add fab flavours and aromas to all your puddings and desserts not just pumpkin.

Ingredients: (makes about 7-8 tbsp)

1 tbsp allspice berries
4 tsp ginger powder
2 tsp nutmeg powder
2 tsp whole cloves
2 x 3 inch pieces of cinnamon
1 tbsp broken up mace blades (optional)

tbsp = tablespoon
tsp = teaspoon

Directions:

  • Break up the cinnamon

  • Grind the cinnamon pieces along with the cloves, allspice berries, and if using, the mace blades

  • Sieve into a bowl

  • Finally, stir in the ginger and nutmeg powders. Combine thoroughly

That's all there is to it!

The Easier Version

2 tbsp cinnamon powder
1 tbsp ginger powder
2 tsp ground allspice
2 tsp nutmeg powder
1 tsp ground cloves

tbsp = tablespoon
tsp = teaspoon

  • Simply combine everything together

    That's it!

    Store in an airtight container out of direct sunlight. Use within 3 months.

    How to Toast and Grind

    Dry toasting and grinding spices is the key to getting the most flavour out of your ingredients and into your home cooking...

    Step 1: Add your whole spices to a dry pan over a low to medium heat and whilst stirring or shaking the pan, lightly toast them for a few minutes. When you can really smell the aromas and they start to darken, they're ready.

    Step 2: Let them cool and then grind.

    Step 3: For a finer blend, put them through a sieve before combining with any ground ingredients and herbs.
