Homemade Lebanese Seven Spice
This is a popular recipe used in traditional dishes in the Lebanon and throughout North Africa. Super easy-to-make, this is particularly good for lamb and beef dishes.
Makes about 7 tablespoons
2 tbsp fenugreek seeds
2 tbsp black peppercorns
2 tbsp allspice berries
1 tbsp ginger powder
2 tsp ground nutmeg powder
2 tsp whole cloves
1 x 3 inch piece cinnamon
tbsp = tablespoon
tsp = teaspoon
- Break up the cinnamon stick
- Grind the cinnamon pieces along with the fenugreek seeds, peppercorns, allspice berries and cloves
- Once ground, add to a bowl
- Finally, add the nutmeg and ginger powders to the bowl and combine
That's all there is to it!

How to Toast and Grind
Dry toasting and grinding spices is the key to getting the most flavour out of your ingredients and into your home cooking...
Step 1: Add your whole spices to a dry pan over a low to medium heat and whilst stirring or shaking the pan, lightly toast them for a few minutes. When you can really smell the aromas and they start to darken, they're ready.
Step 2: Let them cool and then grind.
Step 3: For a finer blend, put them through a sieve before combining with any ground ingredients and herbs.
