Homemade Cajun Spice Mix
This homemade mix is the blend to choose if you're into cooking pan-blackened steaks, chicken and fish. Even if blackening is not your thing, this is still ideal for adding the flavours of Louisiana to your food and can be used as a general seasoning.
Makes about 12 tbsp
4 tbsp paprika powder
3 tbsp dried oregano
2 tbsp dried thyme
2 tbsp black peppercorns
2 tbsp cumin seeds
1 tbsp mustard powder
1 tbsp onion powder
3-4 tsp brown sugar
4 tsp cayenne pepper
2 tsp garlic powder
2 tsp salt
1 tsp celery seeds
7-8 dried bay leaves
tbsp = tablespoon
tsp = teaspoon
- Grind the bay leaves along with the sugar, salt, peppercorns, celery and cumin seeds
- Once ground, add to a bowl
- Add the garlic, onion, cayenne pepper, paprika and mustard powders to the bowl and combine thoroughly
- Finally crumble in the dried oregano and thyme and combine again
That's all there is to it!
Store in an airtight container out of direct sunlight. Use within 3 months.

How to Toast and Grind
Dry toasting and grinding spices is the key to getting the most flavour out of your ingredients and into your home cooking...
Step 1: Add your whole spices to a dry pan over a low to medium heat and whilst stirring or shaking the pan, lightly toast them for a few minutes. When you can really smell the aromas and they start to darken, they're ready.
Step 2: Let them cool and then grind.
Step 3: For a finer blend, put them through a sieve before combining with any ground ingredients and herbs.
