Chicken Rub Recipe - Add Fab Flavours to Your
Grilled, Fried and Oven-Cooked Chicken

With its use of paprika and herbs and spices and a touch of psprika homemade chicken rub recipe is just the thing for your poultry dishes. Super easy-to-make, this rub will season perfectly and flavour beautifully your grilled, fried or oven cooked birds. (See the bottom of the page for links to more of my recipes)

What You'll Need: (makes about 7-8 tablespoons)

3 tbsp coriander seeds
2 tbsp dried rosemary
1 tbsp cumin seeds
1 tbsp paprika powder
1 tbsp chili powder
1 tbsp black peppercorns
4 tsp dried tarragon
2 tsp garlic powder
2 tsp salt (see note 2 below)
1 tsp ginger powder
8 dried bay leaves

tbsp = tablespoon
tsp = teaspoon

Directions:

  • Crumble the bay leaves
  • Grind the bay pieces along with the coriander, cumin, rosemary, salt and peppercorns
  • Add to a bowl
  • Stir in the ginger, garlic, chili and paprika powders
  • Finally, crumble in the dried tarragon. Stir again

Store your chicken seasoning in an airtight jar out of direct sunlight. Use within 3 months.

Note: Dry toasting the cumin, coriander and peppercorns before grinding and combining will add even more flavours to your finished blend. Read more about toasting and grinding. (Link opens in new window)

Note 2: I use a quality fine sea/rock salt for this recipe. Regular table salt could also be used if that's all you have to hand.



Ingredient Note: I use a few whole spices for this chicken rub recipe as these will add the best flavour. However, if you don't have whole just use pre-ground powders. If you do, reduce the amount the recipe requires by about half. So for 3 tablespoons of coriander seeds you use 1½ tablespoons of pre-ground coriander. Reduce any other ingredients you don't have whole by half as well and stir in with any other powders when making.
