Louisiana Cajun Seasoning - Capture the Delicious
Flavours and Aromas of Cajun Cuisine

This spicy Louisiana Cajun seasoning is recommended for capturing the delicious, unique flavours of this most cosmopolitan of cuisines!  Super easy to make and super versatile, this blend will enable you to add the authentic taste of this state to your home cooking. Use it as a dry rub for grilling and frying, as a blackening spice for chicken, fish or steak, or, simply as an all-purpose seasoning for numerous dishes. (See the bottom of the page for other recipes)

What You'll Need: (makes about 7-8 tablespoons)

3 tbsp paprika powder
2 tbsp dried thyme
1 tbsp garlic powder
1 tbsp dried parsley
1 tbsp cumin seeds
4 tsp black peppercorns
4 tsp cayenne pepper
2 tsp onion powder
1-2 tsp sea salt
1 tsp celery seeds

tbsp = tablespoon
tsp = teaspoon

Directions:

  • Grind the salt, peppercorns, cumin and celery seeds
  • Add to a bowl
  • Stir in the paprika, cayenne pepper, garlic and onion powders
  • Finally, crumble in the thyme and parsley.

Store your Cajun spice mix in an airtight jar out of direct sunlight. Use within 3 months before making a fresh amount.

Note: If you have a spare few minutes, dry toasting the cumin seeds and peppercorns prior to cooling, grinding and combining with the other ingredients will really draw out more of their fabulous flavours and aromas.

Note: I use a few whole spices for this homemade recipe. If you don't have whole available, simply use quality pre-ground powders and reduce the amount the recipe requires by half. So if it says 4 teaspoons of peppercorns you would use 2 teaspoons of pre-ground pepper. Reduce any others you don't have whole by half as well and stir in with any other powders when making.
