Montreal Steak Seasoning Recipe - The
Classic North America Blend

Montreal steak seasoning recipe is just perfect for your steaks. This traditional North American blend of spices and herbs is quick and easy-to-make and seasons beautifully whilst adding superb flavours to whatever you're cooking. (See the bottom of the page for other recipes)

What You'll Need: (makes about 8-9 tablespoons)

3 tbsp coriander seeds
2 tbsp dried rosemary
1 tbsp dried thyme
1 tbsp black peppercorns
1 tbsp cayenne pepper
1 tbsp dill seeds
4 tsp onion flakes (or 2 tsp onion powder)
2-3 tsp garlic powder
2 tsp dried chervil
2 tsp paprika powder
2 tsp salt (see note 2 below)

tbsp = tablespoon
tsp = teaspoon

Directions:

  • Grind the salt, onion flakes, dill and coriander seeds, peppercorns and dried rosemary
  • Once ground, add to a bowl
  • Add the cayenne pepper, garlic and paprika powders to the same bowl and combine. (Add the onion powder as well if you used that instead of flakes)
  • Finally, crumble in the dried thyme and chervil. Combine again

Store your Montreal steak seasoning in a cool place out of direct sunlight and in an airtight jar. Use within 3 months before making a fresh amount.






Ingredient Note: I use whole peppercorns, dill and coriander seeds in this Montreal steak spice. If you don't have these, substitute with pre-ground pepper, coriander and dill and cut down the amount you add by half. So for 2 tablespoons of peppercorns use 1 tablespoon of ground pepper. Reduce any others you don't have whole by half as well and stir in with any other powders when making.

Note: Before grinding, it's worthwhile dry toasting the coriander seeds and peppercorns. This really draws out their flavours and aromas. These fabulous flavours will then transfer to whatever you're cooking. Read more about toasting and grinding ingredients. (Link opens in new window)

Note 2: I recommend using a good quality salt: sea, rock etc seeing as you've gone to the effort of making your own Montreal steak seasoning recipe. The better the quality the less processed they generally are, and I think, add better flavour! However, simply use regular table salt (as I often do) if that's all you have available.
