What You'll Need: (makes about 10 tablespoons)

3 tbsp chili powder
2 tbsp coriander seeds
2 tbsp cumin seeds
2 tbsp dried Mexican oregano (see note below)
2 tbsp dried sage
1 tbsp dried mint
2 tsp black peppercorns
3-4 tsp cayenne pepper
2 tsp garlic powder
2 tsp onion powder
2 tsp salt (see note 2)
1 whole nutmeg

tbsp = tablespoon
tsp = teaspoon

Directions:

  • Grate a teaspoons worth of nutmeg
  • Grind the salt, peppercorns, cumin and coriander
  • Once ground, sieve into a bowl
  • Stir in the chili, cayenne, onion, garlic and freshly grated nutmeg
  • Finally, crumble in the dried Mexican oregano, sage and mint. Combine thoroughly

Always store your taco seasoning mix recipes in an airtight jar out of direct sunlight and in a cool place. Use within 3 months.

Note: Dry toasting the coriander and cumin seeds and peppercorns before cooling and grinding will add even more flavours to your finished blend, and is recommended if you have the time. (It only takes a few extra minutes)

Note 2: I recommend a quality rock/kosher/sea salt for using in your recipes as they are less processed. If you only have table salt to hand however, it's perfectly fine to use that.

Oregano Note: If you can't get hold of Mexican, just use regular oregano. They are a different type and taste different, but one or the other will suffice for your taco spice recipes.

Ingredient Note: Whilst for maximum flavour when making your taco seasoning mix recipes, I generally advise using whole spices, sometimes this is not practical.  In these cases it's fine to use pre-ground powders if you reduce the quantities the recipe requires by half. So instead of 2 tablespoons of whole coriander seeds you use 1 tablespoon of pre-ground coriander. Reduce any others by half as well if you don't have whole and stir in with any other powders when making.
