Ingredient Note: I recommend using whole ingredients when and where you can for the above jerk rubs and seasonings as these will impart the best flavours. However, if you don't have them, you can always use pre-ground powders and simply reduce the amount the recipe requires by half. For example, if it says 4 tablespoons of whole coriander seeds, you would use 2 tablespoons of pre-ground coriander. You would reduce any others you don't have whole by half as well and stir in with any other powders when making.

Why You Should Make Your Own Food Seasonings

It's so convenient to pop to the store and pick up a jar of commercial powder; but here's why I recommend you make your own...

  • Homemade will add superior flavours and aromas far more than store-bought blends
  • You decide what is added. Not keen on a certain ingredient? Substitute for another ingredient or leave it out completely
  • Store-bought blends may contain filler ingredients to bulk them up: cheap chili powder, processed salt and husks for example
  • Whilst there will be a use by/sell by date, it's unlikely there will be a manufactured date. It may have been sitting on the store shelf for months, and maybe even years, losing flavour!
  • Homemade means no artificial colours, additives or preservatives. And, If you're able to source organic ingredients, your jerk seasoning recipes will be free of pesticides and GMO's!
