Fines Herbs Recipe - A Classic French
Blend of Dried (or Fresh) Herbs

Traditionally fines herbs is made with fresh chives, tarragon, parsley and chervil, and like in this recipe, sometimes marjoram.But if like me you always have dried herbs available it's acceptable to use these. If you want to use fresh, just use the same amounts as below.

What You'll Need:  (makes 9 tablespoons)

2 tbsp dried parsley
2 tbsp dried chervil
2 tbsp dried chives
2 tbsp dried tarragon
1 tbsp dried marjoram 

tbsp = tablespoon

Directions:

  • Add everything to a bowl and combine thoroughly

That's it!

Store in a cool place in an airtight container out of direct sunlight and use within 1-2 months

Note: Crush or crumble the herbs between your fingers when adding to your recipe. This will help release their flavours.

Ingredient Note: I recommend using 1 tablespoon of the blend for each person you are cooking for. And I only make small amounts as the dried herbs will quickly lose their flavours and effectiveness. Better to make small amounts often.
