A Herby Italian Seasoning Mix For
Authentic Italian Flavours

Whilst I use dried ingredients for this herby Italian seasoning mix, you can use fresh if you prefer. If you do, double or treble the amount of fresh herbs and add the ground flakes and peppercorns separately. You can use this recipe for pretty much everything. And I suggest a heaped tablespoon per serving. (See the bottom of the page for other recipes)

Note: If you only have ground pepper and onion/garlic, use this and reduce the amount the recipe says by half. So for 2 tablespoons of peppercorns you would use 1 tablespoon of ground pepper. And for both ofthe flakes you would use about 2 teaspoons of powder.

Homemade Italian Herb Seasoning

What You'll Need: (makes about 12 tablespoons)

4 tbsp dried parsley
3 tbsp dried basil
2 tbsp dried thyme
1 tbsp dried tarragon
2 tbsp black peppercorns
4 tsp onion flakes
4 tsp garlic flakes
6-8 dried bay leaves

tbsp = tablespoon
tsp = teaspoon


  • Grind the peppercorns and flakes
  • Add the herbs and bay and give another very quick grind
  • Add to a bowl and combine everything thoroughly

Store your seasoning in an airtight container out of direct sunlight. Use within 2 months.

Note: You don't want to grind the herbs or bay leaves too finely for the above recipe. A bit of chunkiness is preferable. I find pulsing the button prevents this somewhat.
