Seasoning Salt - A Flavour-Packed
Blend For Fabulous Home Cooking

This seasoning salt makes a nice change from your regular processed table stuff. With a mix of spices and herbs, it takes just minutes to make and will enhance your cooking no end! Just make sure to use good quality sea, rock or kosher salt. (See the bottom of the page for other recipes)

What You'll Need: (makes about 8-9 tablespoons)

8 tbsp sea, rock or kosher salt
2 tbsp coriander seeds
2 tbsp dried oregano
1 tbsp dried basil
1 tbsp black peppercorns
2 tsp cumin seeds
2 tsp dried chili flakes (or 1 tsp chili powder)
1 tsp whole cloves

tbsp = tablespoon
tsp = teaspoon

Directions:

  • Fairly coarsely grind the salt, chili flakes, peppercorns, coriander and cumin seeds and cloves
  • Once ground, add to a bowl (stir in the chili if you used powder)
  • Finally, crumble in the dried oregano and basil and combine thoroughly

Store your salt seasoning in an airtight jar out of direct sunlight and in a cool place. Use within 3 months before making a fresh amount.

Note: If you have time, I recommend dry toasting the coriander and cumin seeds along with the cloves and peppercorns prior to grinding. The heat releases fab flavours and aromas and is recommended.

Note 2: Whilst I do advise using the best quality you can get hold of, if you only have table salt available, it's perfectly fine to use that and this recipe will enhance it no end!

Note 3: One thing to remember is, this is not like a curry powder or any other cooking blend so use sparingly and don't throw tablespoons of it into your dishes like you might with other mixes.






Ingredient Note:
For the best flavours, I recommend you use whole ingredients where you can. If you don't have them all to hand, just use pre-ground powders and reduce the amounts the recipe requires by half. For example, instead of 2 tablespoons of coriander seeds you would use 1 tablespoon of pre-ground coriander. Reduce any others you don't have whole by half as well and stir them into your salt seasoning.
