If you're cooking Mexican style and tacos are on the menu then a homemade taco seasoning is just the thing! Making it yourself will add the most fabulous flavours and aromas and you can tailor it to go with whatever filling you choose. Below is a versatile blend and one I use for a variety of taco fillings. (See the bottom of the page for links to more of my recipes)
What You'll Need: (makes about 8 tablespoons)
3 tbsp cumin seeds
2 tbsp chili powder (hot or mild)
2 tbsp dried oregano
1 tbsp peppercorns
1 tbsp paprika powder
1 tbsp annatto seeds (optional)
4 tsp coriander seeds
4 tsp dried parsley
2 tsp garlic powder
1-2 tsp salt
1 tsp cloves
3 inch piece of cinnamon
tbsp = tablespoon
tsp = teaspoon
Store your taco spice in an airtight jar, in a cool place and out of direct sunlight. Use within 3 months.
Note: To add even more flavours and aromas, dry toasting the cumin, cloves, peppercorns and coriander seeds before grinding and combining with the other ingredients is well worthwhile. Click here to read more about this easy to do cooking technique. (Link opens in new window)
Ingredient Note: For the best flavour, I often use a few whole ingredients for my taco seasoning. However, if you only have pre-ground powders available just use these and reduce the quantities in the recipe by half. So, if it says 4 teaspoons of coriander seeds you would use 2 teaspoons of pre-ground coriander. Reduce any others you don't have whole by half as well and stir in with any other powders when making.
